How we roast
Coffee holds up for a few weeks at best, so we roast once orders come in and keep the range tight. Orders leave Miami within 2 business days. Gear can be returned within 30 days; opened coffee can't, for reasons we trust are clear.
A short list, roasted each week
We carry 12 coffees across 4 categories, between $28.00 and $138.00. The list stays short because coffee only tastes right for a few weeks and a long list means old bags. Everything is roasted to order on a Tuesday and leaves on a Wednesday, which is why we can't always ship the same day and why what lands tastes like what we tasted.
Sourcing
We work with two importers who publish what the farm was paid, and we print that figure on the bag. Lots come by the sack, not the container, which is what lets a small roaster offer a single-farm coffee at all. When a lot is gone we don't swap it quietly — the coffee comes off the list.
Roast and rest
Everything goes through a 12kg drum machine and is profiled to the lot rather than to a set curve. Bags have one-way valves and are filled the day after roast, and we print the roast date instead of a best-before, because a best-before on coffee is a marketing date and everyone knows it. Give a filter roast four days and an espresso roast ten.
