The tea
First harvest sencha from Kagoshima, steamed in the standard style rather than deep-steamed, so the leaves stay needle-shaped and the liquor stays clear instead of cloudy.
Brewing
Five grams, 70°C water, sixty seconds for the first pour. Boiling water will make it bitter and there's no fixing it. The same leaves will give you a second and third infusion, each a little shorter than the last.
