The coffee
Washed Colombian decaffeinated by the sugarcane EA method at a plant in the Cauca valley. Roughly ninety-seven percent of the caffeine comes out — that's what decaf means everywhere, no process takes all of it.
Brewing
Same as the house blend, sixty grams per litre. Decaf beans are more brittle, so they grind a touch finer at the same setting; go one notch coarser if the cup tastes muddy.
