The coffee
Sixty percent natural Brazil from Cerrado, forty percent washed Colombia. Roasted to the start of second crack and dropped — darker than our filter roasts, considerably lighter than what you'll find on a supermarket shelf.
Brewing
Eighteen grams in, thirty-six grams out, twenty-eight seconds as a starting point. Give this one ten days from roast — espresso needs longer to settle than filter, and a fresh bag will gush and taste hollow.
