The coffee
Washed Caturra and Colombia varietals at 1,700 metres, eighteen hours of fermentation, dried on raised beds. The lot is roughly forty sacks, so it will sell out — and when it does, the page comes down. We don't substitute another coffee under the same name.
Brewing
Sixty grams per litre, water just off the boil, pour it slow. Four days rest at minimum. If the cup tastes sharp it's under-extracted, so grind finer before you blame the coffee.
